The Dorade Royale en Papillote

Dorade Royale en Papillote is a classic French cooking method where a whole dorade royale (sea bream) is wrapped in parchment paper with herbs, vegetables, and sometimes a splash of white wine, then baked. This technique allows the fish to gently steam in its own juices, resulting in tender, flavorful flesh infused with the aromas of the accompanying ingredients.

Our Very Own FiNNBAR is
Featured in Forbes and Now Hiring for the Spring

Finnbar was featured in Forbes Food section for their classic cocktails and simple menu.

“On a recent Saturday night, beverage director Ethan Stuart greeted us at FiNNBAR. For a place that just opened, it was bustling with energy as locals filed in taking seats in the dining room and at the bar.
"Our cocktail menu is devoted to the classics,” Stuart told me. “It gives us the chance as a young bar program to get intimate with the recipes that have stood the test of time.” Looking at the evening’s cocktail list, he reminisced about his first encounter with what he called “the magic” of the Sbagliato.”
